Mediterranean Garbanzo Bean Salad
Cast your fate to the wind with this one! I measured NOTHING! Simply took whatever I had in the fridge and pantry and ran with it. Drizzled with EVOO and Red Wine Vinegar. I wished I had fresh Parsley but not at my house today.I did have fresh Rosemary so I added a finely minced teaspoon. Dried Basil and dried Parsley seasoned this beautifully along with salt and freshly ground black pepper. Enjoy!

Servings: 4 servings
- 1 14-15 oz can Garbanzo Beans rinsed and drained
- 1/4 English Cucumber quartered and chopped
- 1 bunch sliced Green Onions white and light green parts only
- 12-14 Grape Tomatoes halved
- 12-14 pitted Kalamata Olives halved
- 1 Tsp Fresh Rosemary minced ( or 1/4 tsp dried)
- 1 Tsp dried Parsely
- 1 Tsp dried Basil
- EVOO for drizzling
- Red Wine Vinegar for drizzling
- Salt and Pepper to taste
Prep all ingredients
Combine all ingredients in a bowl. Drizzle with EVOO and Red Wine Vinegar. Add Herbs. Season to taste with Salt and Pepper.
