Clare's Escalloped Chicken Casserole
Now that I know such a term, this is simply a glorified "strata." Broken bread with an eggy custard with cheese. But, since I knew not that term back in 1962, this is Clare's Chicken Casserole. And yes, it has a delicious eggy custardy filling with tasty bites of chicken and topped with scrumptious baked cheese. Really now, can you ask for anything better on a cold,cold winter day? Dan said, this is one of those dishes that he could eat and eat and eat until he was sick, it was so good!

Servings: 6 people
- 8 slices White Bread with Crusts
- 2 Cups diced, cooked Chicken Rotisserie is fine
- 1 Cup diced Celery
- 1/2 Cup minced Onion
- 1/2 Cup SaladDressing like Miracle Whip
- 1/2 Tsp Poultry Seasoning
- 1/4 Tsp Salt
- 1/8 Tsp freshly ground Black Pepper
- 3 Large Eggs
- 3 Cups Milk
- 1 Can Cream of Chicken Soup
- 1 Cup Shredded Cheddar Cheese or more!
The ingredients. After 55 years the only change I made was to add a touch of Poultry Seasoning
Tear up and layer FOUR slices of bread in a 10x14 pan.
Mince and dice the Celery and Onion
Combine the diced Chicken, Celery and Onion with the Salad Dressing and place it evenly over the broken bread.
Cover this with 4 more slices of torn bread. Sprinkle evenly with Salt, Pepper and Poultry Seasoning
Whisk the 3 Eggs with the Milk until well combined and then pour this over the casserole. At this point you can cover and refrigerate over night. Or,...let it sit for a few minutes and go ahead and bake which is what I do.
Bake uncovered at 350° for 1 hour. Remove from oven
Dot and spread the Casserole with the Cream of Chicken Soup.
Then top with the Cheddar Cheese. Return to the oven for another 15 minutes until the Cheese is melted. Then serve! Nothing better!
