Back in the 50’s and 60’s when I was growing up, kitchens all over rural America had glass containers full of biscuit mix so wives could turn out homemade biscuits in a flash every morning for breakfast. Then, boxed mixes became available which helped harried wives and mothers get food on the table even faster. This was a huge help not only to housewives not employed outside the home, but for working women like my mother, who had both children and her parents to feed.
Right now, grocery prices are sky rocketing and pre-packaged mixes have many folks re-thinking their purchases. This homemade biscuit mix takes just a few minutes to prepare. It makes enough for six batches of biscuits for a fraction of the price of packaged mix. Stored in an airtight container in a cool location, it is shelf stable for six weeks. The biscuit mix may also be stored in the freezer for up to six months! That is a blessing! To make biscuits you only need add 1/2 cup of milk or buttermilk to 2 cups of the mix. I packaged mine in 2 cup portions making it even easier to pull one out, dump it in a bowl, add milk and Bob’s your uncle, you have hot biscuits just waiting to be slathered with butter and jam.
This recipe can easily be cut in half for smaller families or for those who do not often make biscuits.
Here’s what we’ll need. Just five simple ingredients!
Homemade Biscuit Mix
Ingredients
- 10 cups all purpose flour
- 1/3 cup baking powder
- 1/4 cup sugar
- 4 tsp salt
- 2 cups vegetable shortening like Crisco
Instructions
- Measure 10 cups flour into a LARGE bowl
- Stir in the baking powder, sugar and salt until well combined
- Cut in the vegetable shortening using a pastry blender until mixture resembles coarse crumbs.
- The biscuit mix should look like this.
- If desired, package into 2 cup portions, label and store in a cool dry place.
Homemade Biscuits
- Place 2 cups of the biscuit mix in a bowl. Stir in 1/2 cup of milk or buttermilk. Lightly flour a work surface and scrape the dough out. Knead lightly about 10 times. Pat out the dough to about 1/2 inch thickness. Using a 2-1/2 inch biscuit cutter, cut out 10 biscuits. Re- roll the dough as needed to make 10 biscuits. Heat oven to 450 degrees.Place biscuits on an ungreased baking sheet. Bake 10-12 minutes until golden brown.
